A Little Background
Craig has been at the Bay Horse with his parents for 24 years. During this time, the reputation for consistently high quality food has grown. Dishes such as slow cooked Goosnargh duck legs and his Sunday roast of Lancashire Sirloin have quite a following. Craig is commited to his work in the kitchen and leads the team through every shift. In summer 2015 Nicola, his wife (previosuly a teacher) joined the team and she and Craig hope to build upon the successes of his parents as they look to the future. She oversees staff recruitment and management and is as happy to be found serving customers as working on publicity and marketing events.

Both Nicola and Craig feel privileged to live in such a beautiful part of the county and indeed the country. The picturesque Lancaster Canal is just a 5 minute walk from the pub and the beautiful Trough of Bowland slowly falls to meet the Bay Horse before the landscape further flattens towards the sea. Our own gardens provide a little Lancashire idyll, with cows grazing just over the fence and hares boxing in the fields beyond.

Our varied landscape means lots of lovely produce!

With rich, fertile farming land, rugged hills and a fabulous coastline, local produce is bountiful and just a short drive will take you to producers galore: Dewlay Cheese, Port of Lancaster Smokehouse, Wallings Dairy, Honeywell Meats, Johnson and Swarbrick’s famous Goosnargh poultry to name just a few- all are found within a half hour radius. Their produce features on our menus and we can recommend a jaunt to visit them on site, as each offers a unique insight into their business and our county as well as providing an opportunity to purchase your own to take home!
